Man dies in California botulism outbreak from nacho-cheese

CNN affiliate KTXL reports that one woman, Lavinia Kelly, was reportedly hospitalized after putting the nacho cheese sauce on some Doritos chips on April 21.

Family members of Galindo-Larios did not immediately respond to an email seeking comment.

Botulism can result in death due to respiratory failure but it's rare. Symptoms include blurry vision, slurred speech, drooping eyelids and paralysis.

Authorities said Friday all 10 people sickened were hospitalized.

The U.S. Department of Agriculture gives detailed instructions for how to can foods safely, and the CDC has a list of recommendations to help prevent botulism in your canned food.

In 2014, only 161 cases of botulism were confirmed and just 15 of those were food-borne illness.

The majority of botulism patients never fully recover. So, overall, foodborne botulism isn't a common health threat you need to worry about in your day-to-day life.

Botulism is caused by toxic bacteria, usually Clostridium botulinum but sometimes Clostridium butyricum and Clostridium baratii. "In that kind of environment, bacteria can multiply and the bacteria release a poison into the environment".

Tom Russo, M.D., head of the infectious disease division at the Jacobs School of Medicine and Biomedical Sciences at University at Buffalo and an infectious disease specialist with UBMD Internal Medicine, tells SELF that foods that don't undergo proper processing to kill spores are at an increased risk of causing botulism.

The National Organization for Rare Disorders says there were 199 confirmed and 14 probable cases of botulism reported to the Centers for Disease Control and Prevention in 2015, the past year for which statistics were available. In the California case, the cheese manufacturer says the toxin was not found in the cheese product. Some store-bought foods can also be contaminated but it's not common.

NBC News reports botulism is fatal in about 5% of cases.

How is botulism diagnosed and treated? "That's a process that could take time and that's why the recovery is very slow", Kasirye said. Prior to that, 16 people in Texas got botulism from frozen, canned chili in 2001, but none died.
